Diwali is a time of celebration and joy. A great way of expressing this joy is by cooking and relishing delightful and delicious savories. Of course certain dishes can be cooked and eaten at all times but preparing and having them together as a family on the occasion of Diwali has its own beauty.

When we are very happy we share our joy with all our near and dear ones. Similarly on Diwali families distribute sweets and delicacies to friends, neighbors and the needy as an expression of their joy. Each family has its own recipe of the cuisines which they use year after year.

Here are recipes of Kheer and Jalebi, which are famous delicacies served on the occasion of Diwali. You can try them out and treat your loved ones.

Kheer

Ingredients

1/4th cup Long grain Rice (washed and drained)
4-5 cups Milk
2-3 cardamom seeds (crushed)
2 tbsp. almonds (blanched silvered)
A pinch of saffron threads, soaked in a little hot milk
1 tbsp skinned pistachio nuts (chopped)
1 tbsp raisins (optional)
2-3tbsp. sugar or as desired

Method

Jalebi

Ingredients

2 cups All purpose flour (maida)
11/2 tbsp. fine grained semolina or rice flour
1/4th tsp. baking powder
2 tbsp curd (plain yogurt)
11/4th cups warm water
1/2 tsp. saffron threads, slowly dry-roasted and powdered
3 cups sugar
2 2/3rd cups water
1/2 tsp green cardamom seeds powder
11/2 tbsp. rose water
Ghee or vegetable oil for frying
